<p>1 medium cucumber, peeled if desired<br />
Salt and black pepper to taste<br />
1 cup plain yogurt<br />
2 teaspoons minced onion, shallot, or scallion<br />
1 tablespoon olive oil<br />
3 tablespoons minced fresh mint leaves</p>
<p>Cut the cucumber in half lengthwise and scoop out the seeds. Chop it into 1/2-inch dice and combine it with all remaining ingredients. Check seasoning and serve, or refrigerate until ready to use, but use within a few hours. Makes about 2 cups.</p>
