This is an even healthier version of tabouli, using the protein and mineral packed quinoa in place of bulgar. If you find there’s a little bitterness to it, you can smooth that out by adding a little honey after the quinoa is cooked.
A splash of lemon gives this lentil soup a bright, light taste.
