Cold Cucumber Soup

This is a great chilled soup for a hot summer day.

1 1/2 cups diced cucumber
1 1/4 cups plain low-fat yogurt
1 cup water
1 clove garlic, pressed
1 teaspoon finely chopped fresh mint
1/2 t. dill (weed)
2 T. chopped chives (garnish)

Combine all ingredients (except chives), mix well and chill for 2-4 hours. Serve garnished with chopped chives. Serves 4
