Cucumber-Yogurt Dip with Mint

This recipe also works nicely with dill or parsley.

1 medium cucumber, peeled if desired
Salt and black pepper to taste
1 cup plain yogurt
2 teaspoons minced onion, shallot, or scallion
1 tablespoon olive oil
3 tablespoons minced fresh mint leaves

Cut the cucumber in half lengthwise and scoop out the seeds. Chop it into 1/2-inch dice and combine it with all remaining ingredients. Check seasoning and serve, or refrigerate until ready to use, but use within a few hours. Makes about 2 cups.
