Feta Dressing with Marjoram and Mint

Very good with salads, vegetables or over warm lentils or beans.

2 T. aged red wine vinegar
1 T. chopped marjoram
2 t. chopped mint
1/3 cup olive oil
1/2 cup crumbled feta cheese
Salt and pepper

Place the vinegar and herbs in a small bowl and whisk in the oil. Stir in the cheese and add seasoning (the salt may not be needed due to the feta). To make this creamier, mash the cheese with the oil first.
