Lemon-Tarragon Vinaigrette

Lime can also be substituted for the lemon for a different taste, namely, lime-tarragon vinaigrette… this recipe works great as a salad dressing or for fish.

1 teaspoon grated lemon zest
1/ teaspoon salt
1/2 teaspoon minced fresh tarragon
1/4 cup freshly squeezed lemon juice
1/2 cup extra-virgin olive oil

Mix the zest, salt, juice and tarragon briefly with a whisk or in a food processor. Slowly add the oil in a stream, then adjust the salt or add a little more oil as needed. Let sit for a bit to develop flavor.
